Growing note
A cool-season crop, best sown October to February in most Indian cities; it bolts and turns bitter fast once daytime temperatures climb above the mid-20sĀ°C. Keep the soil consistently moist, since letting it dry out toughens the leaves. Harvest outer leaves and let the center keep producing rather than pulling the whole plant at once.
